Happy National Watermelon Day! I had no clue this ‘holiday’ existed until yesterday but I’m so glad I found out about it… of course I want to celebrate one of my favorite foods 🙂
This recipe is perfect summer -> light, delicious, refreshing, and healthy! Plus, you can never ever go wrong with tacos. The flavor combos of the limey coconut mahi mahi plus the sweet watermelon salsa are simple and work really well together. I’m sure any white fish or shrimp would taste good as a substitute for the mahi mahi. This meal is pretty quick to throw together, too. I hope you enjoy as much as I did!
Limey Coconut Mahi Mahi Tacos With Watermelon Salsa
For The Fish
— mahi mahi – however much you want to make! I made a little bit less than 1 lb.
— 1/4 cup melted coconut oil + enough to cook with
— juice of 2 limes
— zest of 1 lime
— 1/2 tsp paprika
— 1/4 tsp chipotle powder
— 1/4 tsp chili powder
— salt & pepper as desired
1- Combine coconut oil, lime juice + zest, paprika, chipotle powder, chili powder, salt, and pepper in a bowl.
2- Heat a frying pan on medium-high heat.
3- Brush the mahi mahi with coconut oil mixture then cook each side for about 3-4 minutes. I brushed/flipped mine 2 times each for some more flavor.
For The Salsa
I’ve made this recipe before, but here is a smaller batch version:
— 1 cup diced watermelon
— 1/2 c diced red pepper
— 1/4 c diced yellow pepper
— 1/4 c red onion
— juice of 1 limes
— 2 tsp olive oil
— salt as desired
1- Throw all ingredients in a bowl & toss.
For The Tacos
— avocado slices or guacamole -> I went the guac route
— feta cheese
— lime wedges
— whole wheat tortillas or taco shells
1- Put together your best taco 🙂
Seriously, so bomb! Can’t wait for leftovers at lunch.
