Limey Coconut Mahi Mahi Tacos With Watermelon Salsa

Happy National Watermelon Day! I had no clue this ‘holiday’ existed until yesterday but I’m so glad I found out about it… of course I want to celebrate one of my favorite foods ūüôā

This recipe is perfect summer -> light, delicious, refreshing, and healthy! Plus, you can never ever go wrong with tacos. The flavor combos of the limey coconut mahi mahi plus the sweet watermelon salsa are simple and work really well together. I’m sure any white fish or shrimp would taste good as a substitute for the mahi mahi. This meal is pretty quick to throw together, too. I hope you enjoy as much as I did!
