So I had to make these a few times before they came out the way that I wanted them to. The first time I forgot the baking powder & they turned out so rubbery that I didn’t even bother trying them. I couldn’t figure out why until a few minutes letter when I remembered I forgot one of the most important ingredients… duh. The second time I didn’t use coconut almond milk and they were okay. Third time was a charm! I made them after I ran my long run last weekend and they were just what I needed!
These pancakes are perfect for after any kind of workout! Top them with some sprinkles & yogurt as ‘frosting’! Or, you can run to the store after you cook them and buy whipped cream 🙂 Also, you can never forget maple syrup!
Birthday Cake Protein Pancakes
— ½ c oats
— 1 scoop birthday cake protein powder -> i’m sure vanilla will work perfectly as well!
— 2 egg whites
— 1 egg
— ¼ c coconut almond milk
— ¼ tsp almond extract
— 1 tsp baking powder
— yogurt for ‘frosting’ as you desire
— coconut oil
1- Throw all ingredients into a blender or nutri-bullet & blend until smooth. I blended up my oats, protein powder, sprinkles in my food processor first then remembered I can’t put liquids in it…
2- Heat a skillet on medium-high heat & pour the coconut oil on
3- Pour batter onto pre-heated skillet -> the batter is a bit watery so it spreads out fast when you pour it on the pan.
4- Let batter cook for a minute or so, until it is bubbling & the bottom is golden brown
5- Flip & let cook through
