This week is all about lemons! Did you see my post on the benefits of drinking warm lemon water first thing in the morning? If not, go check it out! But first, check out the below recipe 🙂
I started getting a sore throat on Monday and knew that I needed to do everything I could to prevent any type of sickness from coming my way -> Hello, best weekend of the year starts tomorrow! So, along with downing lemon water and emergen-c, I decided to to make some delicious Lemon Chicken & Quinoa Soup!
This soup has a mix of fresh veggies (which I’m now remembering that I didn’t add kale!) and lots of protein from the chicken & quinoa. It tastes savory and herby at the same time, all with a zing from the lemon… Delicious!
Lemon Chicken & Quinoa Soup
- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 4-5 stalks celery
- 2 c peeled, chopped carrots
- 6 c chicken stock (I used some water too)
- 1 tsp tarragon
- 2 bay leaves
- 1/2 to 1 c quinoa
- 3 tbsp fresh lemon juice
- zest of 1 lemon
- 2 c cooked, shredded chicken (I baked a few chicken breasts then shredded them after)
- 1 tsp chives
- salt and pepper, to taste
1- In a large pot, heat olive oil over medium heat. Sauté onion, celery and carrots for about 5 minutes to soften.
2- Pour in chicken stock, tarragon, salt, pepper and bay leaves. Bring to boil.
3- Once boiling, add in quinoa and reduce heat to simmer.
4- Cook 20 minutes or until tender.
5- Stir in lemon juice, zest, chicken & chives.
