Watermelon Popsicles

Still on a watermelon kick over here… and I’m pretty sure it’s going to stay this way for the entire summer 🙂 It’s just so refreshing!

I’ve been pinning homemade ice pops on pinterest so I decided to try some out. Of course watermelon is the base of it! Combined with other fresh fruit, it’s the perfect snack. I’ve honestly been eating these on the way to work!

Watermelon Popsicles

  • 3 cups watermelon puree (I just kept throwing some in the food processor until I had my desired amount)
  • 1/2 cup fresh blueberries
  • 1/2 cup chopped fresh strawberries
  • 1 kiwi, peeled and sliced
  • 1 mango, cubed

1- Cut the watermelon into chunks and then puree it in a blender (or food processor) until smooth. Set aside.

2- Fill each popsicle mold with the chopped fresh fruit and then pour in the watermelon puree until each mold is full to the top.

3- Place into your freezer and freeze for about 6 to 8 hours (or overnight)

4- When ready to serve, run the popsicle molds under warm water for a few seconds so they are easier to pull out.
