These bliss balls turned out just how I was hoping. I wanted a sweet, healthy snack that I could grab quickly… mission accomplish! They’re packed with nutrients from the matcha, pistachios, dates, and almonds. Plus, they are super easy to make and they keep all week long. Eating one of these bad boys will satisfy your sweet tooth for sure!
Matcha Pistachio Bliss Balls
- ¾ cup raw cashews
- ¼ cup raw pistachios
- 12 Medjool dates, pitted
- ¼ cup shredded unsweetened coconut
- 2 tsp matcha powder
- 1 tbsp coconut oil
- ¼ pistachios, chopped (for balls at end)
1- Place all the ingredients (except the last ¼ cup pistachios) into a food processor.
2- Process for one minute or until finely chopped & blended.
3- Scoop out balls of mixture & roll to make evenly sized balls.
4- Rolls balls through the chopped pistachios & make sure you press them firmly into the balls.
5- Refrigerate for 15 minutes.
